Apple, Ham and Cheese Roll Ups

I was asked to bring an appetizer to one of the holiday feasts we attended this past Thanksgiving.  I wanted something crazy simple and light.  Usually, the family begs for a cheese and bread platter.  The thing is eating a ton of crackers or bread before the big Turkey Day feast does not bode well for consuming large quantities of green beans, turkey and stuffing with gravy later.

So, I came across a recipe from Some the Wiser and I must admit that her pictures are extremely better done than mine.  One day I might actually learn to use my camera, but alas today I instead go to the dentist, so that will not be happening…

In the original recipe, there was a part where you made a homemade Greek yogurt honey mustard dip.  I wasn’t feeling the yogurt honestly.  I like my yogurt with fruit and granola and just didn’t feel the dip that day.  I am sure though it would be a great accompaniment for these healthy bites.  Instead I kept it simple by putting the hot and sweet mustard from Trader Joe’s and calling it done :)

Apple, Ham and Cheese Roll Ups

  • 1 lb of Deli Ham
  • 3 Granny Smith Apples
  • 8 Slices of Sharp Cheddar Cheese
  • 1 tbsp Lemon Juice
  • Any Style of Mustard for Dipping
  1. Fill a medium bowl halfway with cool water and pour in the lemon juice.
  2. Core and cut the apples into ten slices and put into the lemon water.  Let them sit for five minutes then take them out and pat them gently dry with a couple of paper towels.
  3. Cut the cheese slices into fourths.
  4. Put a cheese slice on top of one of the apples and wrap the ham around the cheese and apple.
  5. Serve right away with the mustard or cover and put in the refrigerator until it is time to serve.

Personally, this would be a great carb-free lunch or snack too!  It was easy, healthy and a crowd pleaser.  It is funny how good simple things can be.  Now go and make a family meal (or appetizer) of your own…Clink!
