Buffalo Chicken Wing Party Dip

I am really bad at taking pictures.  I need to enroll in a camera class and probably learn how to maneuver around Photoshop.  But, even if I did all of this, I still might not be successful at putting beautiful pictures on this blog.  See, I write the blog to remember the things I make and how I made them.  And, if someone else needs inspiration or stops by…sweet.  My point is, the food is first, always.  I get so excited about the art of cooking and the enjoyment of eating the food that most of the time I actually forget to even take a picture so I can then post the recipe.  Therefore, even if I learned how to take a beautiful picture, I still might fail because I forget to even pick up the camera.

That is what happened with this picture.  I was making this dip for a holiday gag gift party with some new friends that I made in the neighborhood, and I was so excited to get there and start the party that I forgot to take the money shot.  Instead, I snapped a quick picture on my phone hoping it would kinda work later on.  I am not even on Instagram, so I can’t manipulate the crappy phone picture I took to maybe make it look decent.

Therefore, you cannot see how amazing this dip is!  It has a golden cheesy crust and when you dig in, there is ooey-gooey buffalo cream cheese dip with pieces of rotisserie chicken woven through and once in a blue moon a small bite of buttermilk bleu cheese for tang and authenticity.  This dip is super easy to put together…you just dump and mix and bake.  Serve it with crackers, pita chips, celery and/or carrots and be ready to receive rave reviews.  Just don’t show them my picture!

Buffalo Chicken Wing Party Dip

  • 2 (8 oz) bricks regular or reduced fat Cream Cheese, softened
  • 2 cups chopped, deboned and deskinned Rotisserie Chicken Meat
  • 1/2 cup Buffalo Wing Sauce
  • 2 tbsp Sriracha Hot Sauce (optional)
  • 1/2 cup Ranch Dressing
  • 1/4 cup crumbled Bleu Cheese (optional)
  • 1 1/2 cup Monterey Jack shredded cheese
  • 1 tbsp Granulated White Sugar
  • 1 tsp Season Salt
  • 1 tsp Pepper
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 tsp Ground Cayenne Pepper
  1. Preheat the oven to 350 degrees
  2. In a large mixing bowl put the softened cream cheese, chicken, wing sauce, Sriracha (optional), ranch dressing, bleu cheese crumbles (optional), 1 cup of the monterey jack cheese, granulated sugar and all the seasonings.  Stir till completely combined.
  3. Pour mixture into an oven safe baking dish.  Sprinkle the last 1/2 cup of monterey jack cheese over the top and as an option, sprinkle a small amount of extra ground cayenne pepper over the top.  Put in the 350 degree oven for 25-30 minutes
  4. Serve with crackers, pita chips, tortilla chips, celery and/or carrots
