Green Bean and Feta Salad with Herb Vinaigrette

Last week I served up some killer pasta with buttered tomato sauce.  It was creamy, fruity and fantastic.  Because the butter added such a richness to the sauce, the pasta needed a vegetable side that was cold, crisp and acidic.  It would have been an obvious choice to just make a very simple green salad with a Dijon vinaigrette and I am sure that would have been sublime, but I was looking for something just a bit more.  Green beans were on sale at the store, so I decided that they would fit the bill just fine.

Green Bean Salad

This salad had a ton of fresh herbs in it, chopped tomato, thinly sliced onion and salty feta.  The green beans are quickly cooked in salted boiling water and then shocked in an ice bath to retain their color and slight crunch.  Just like most things with dressings or sauces, the leftovers taste even better then next day.  It was a great compliment to the pasta.

I am just putting it out there…not some of my best pictures, but my friends and family were starving and to be honest so was I.  I don’t know how others stage the food and create beautiful pictures when there is a group of hungry people waiting to eat.  I just took the shots to fulfill the need, but honestly this salad is so much better than the pictures.

Bean and Feta Salad

Green Bean and Feta Salad with Herb Vinaigrette

  • 2 lbs fresh Green Beans, washed and trimmed
  • 1/2 medium Red Onion, thinly sliced in half moons
  • 3 medium Red Tomatoes, de-seeded and chopped
  • 1 cup Feta Cheese Crumbled
  • 1 tbsp Salt
  • Water for Boiling
  • Herb Vinaigrette (recipe below)
  1. Bring a large pot of water with the 1 tbsp of salt to boil.
  2. In a large bowl make a ice bath with @4 cups of ice to 2 cups of water.
  3. When salt water boils, place green beans in the water and boil for 3-4 minutes.
  4. Drain the water from the beans in a colander and then immediately place beans in the ice bath.  Mix around and let them cool completely down.  Add more ice if needed.  Once they are chilled (@5 minutes), drain in the colander the water and ice from the beans.  Just leaving the beans in the colander.
  5. Put green beans in a dry mixing bowl.  Add, onions, tomatoes and vinaigrette to the beans.  Gently mixed till combined.  Put in serving bowl and top with the feta.  Serve immediately or refrigerate until ready to serve.

Herb Vinaigrette

  • 3 tbsp of Balsamic Vinegar
  • 3 tbsp of Olive Oil
  • 1 tbsp Dijon Mustard
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Granulated Onion Powder
  • 1/2 tsp Dried Oregano
  • 1 tbsp Fresh Chopped Dill
  • 1 tbsp Fresh Thyme Leaves
  • 1/4 cup Fresh Chopped Parsley
  • Salt and Pepper to Taste
  1. In a bowl with a whisk combine the Vinegar, Oil and Mustard.  Whisk to combine.
  2. Add the dry seasonings and whisk.  Now gently stir or whisk in the fresh herbs.  Taste and adjust seasonings as needed.
  3. Add to salad when ready or refrigerate until you are ready to dress the salad.
