Zucchini Frittata with Kale Salad

It’s been awhile…Like just over a year awhile.  Well, that happens, you know – life.  I never stopped cooking, but I started PTO, after school activities five days a week, home duties, trying to continue to work out…etc, etc, etc.  Pretty soon hobbies get put into the “if there is time later” pile and then eventually that pile never gets touched.  But, then something happened that has rekindled my desire to post once again.

I have been following Dinner a Love Story for some time now.  I dig her idea of sometimes you can cook for pleasure and sometimes you just need to cook to feed the masses.  A couple of weeks ago, Jenny asked her followers if we were interested in reviewing her upcoming cookbook, “Dinner:  The Playbook.”  I thought, what the hell, that sounds like fun and I get a free cookbook…sweet!  So, I applied and lo an behold I actually got picked.  Getting the FedEx package was like Christmas Day for me!

Because I agreed to write about what I cook and to review some of the recipes in the cookbook, I thought this was as good of a time as ever to re-start this thing called a blog.

So tonight, I was ill prepared to make something amazing.  I haven’t been to the grocery store in about four days and it was 6:30pm when I thought about dinner.  Therefore, I went with a what I could find attitude and made do with what was in the house.  Luckily I had some fresh zucchini and yellow squash, eggs and cheese so a frittata was an easy solution.  And then the holy grail of greens right now was in my house so I could tackle the incredibly easy side dish of Confetti Kale with Pecorino.  If you want that recipe, my friends you will have to go out and buy the book @August 2014.  Sorry, but a deal is a deal :)

 Frittata with Zucchini and Yellow Squash

Serves 4 – 6 Servings

  • 1 Zucchini – small dice
  • 1 Yellow Squash – small dice
  • 1/2 Yellow Onion – small dice
  • 2 tbsp Olive Oil
  • 6 Eggs – scrambled
  • 2 tbsp Milk
  • 1 cup Cheddar Cheese - divided in 3/4 cup and 1/4 cup (or any other cheese of your choice)
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 tsp Italian Seasoning – plus more for top
  • Salt and Pepper to Taste
  1. Cut up all of the vegetables and sauté them with the 2 tbsp of olive oil in a large sauté pan that can eventually go into the oven.  Sauté them on a medium heat.
  2. While vegetables are sautéing, add the onion powder, garlic powder, italian seasoning and salt and pepper.
  3. Set your Broiler on High.
  4. While that is happening, whisk the eggs with the milk and 3/4 cup of the shredded cheddar cheese.
  5. After the vegetables have softened (5-8 minutes), add the egg mixture and continue to cook on the stovetop for another 5 minutes.
  6. Sprinkle the top with the last 1/4 cup of cheese and lightly dust the top with the italian seasoning.
  7. Broil for 5-7 more minutes or until top in bubbly and slightly brown and middle is cooked through.
  8. Let the frittata rest for @5 minutes before slicing and serve with kale salad or crusty bread.
